I would make these mini cheesecakes which are a fun, easy recipe passed down from my mom.
They are cupcake sized cheesecakes that are perfect for any occasion like a bridal shower, or simple enough to make for no special reason.
Ingredients:
2 (8 oz.) cream cheese
3/4 cup sugar
1 egg
1 tbsp. lemon juice
1 tsp. vanilla
vanilla wafers
blueberry, cherry, or other pie filling
Paper or foil lined cupcake holders
1. Blend first five ingredients.
2. Place wafer in the bottom of paper cupcake holder.
3. Pour mixture over the wafer into baking cups, filling about 2/3 to 3/4 of each cup.
Bake at 325 degrees for 15-20 minutes.
4.Let cool.
5. Top with pie filling. Refrigerate
Makes 18 mini cheesecakes.
